They love doing super limited color choices with SRT vehicles. Plus, silver is the best sleeper color out there. Black, when it's waxed and shiny, definitely gets some looks. But silver just blends into the crowd (with all the other silver-colored vehiculars on the hi-ways and by-ways!). As much a Challenger will be able to blend, at least.

Plus, it's probably what they had the most of lying around. "Hey, guys, we can just use this silver. I mean, we've got a poop-ton of it just sitting here."
