I took my 2010 RT for a oil change last week. I just hit 36k miles. They recommended I do the following:
Spark plugs: $389.95
Air Filter - $89.95
Throttle Body Plate - $119.95
Fuel Injection service - $189.95
The question is, do dealers just go by the 'book' when it comes to maintenance? For example, if I leave it up to the dealer, they would want me there very 3k miles for a oil change even though the manual clearly states its every 6k miles. Can spark plugs go for longer? Fuel injection? I have to return in two weeks for a strut and wanted to get done only what is really needed.

Unless you have 'severe service' mostly in-town, stop & go, the oil change reminder will trip off accordingly.
Otherwise, every 6k or when the car's system tells you it needs it.
(I've seen intervals average 5.5 - 5.7K on mine and the earliest was 3.7k during a hot summer trip through the mountains - got the oil plenty hot...)
The other stuff - if its working properly, doesn't need it.

….save yourself about $50 and replace the air filter yourself. I would say to do the plugs yourself as well but I can understand how some may not want to mess with that. The filter on the other hand is a piece of cake.
The other two services are a complete rip-off IMO so unless you’re having an issue (like Hal mentioned), I would decline those.

There is a great video on Speedy's Garage with step by step instructions for changing the spark plugs. I thought that seemed kinda silly till I watched it.
Even paying $100 for plugs I can see myself saving $290 this spring. Get a washable filter and never pay for another. The others only if the car isn't running right and then there's an app for that too.

My Hemi has 16 spark plugs. Just buying those at the parts counter adds up.

....at about $4.50 for OEM copper NGK's (even less if you look around), 16 plugs is still under $100. The OP's cost would be more like $75 or less. Whether saving ~$320 is worth it to folks like the OP is something they need to decide. ....that's some costly labor for a relatively easy job IMO.
