Any know why the 4 piston Brembo brakes were changed for the 2021 Scat Pack?
The 4 piston front caliper has changed and there aren't slotted rotors all around the rear caliper is unchanged.
Perhaps it was cost savings or lack of available parts.

The caliper is now an aluminum monoblock design and is the same caliper used on the Demon, so it's probably a better and definitely lighter caliper than before. Plus it looks a lot better.

As far as the slots, haven't seen a definite reason posted, maybe they figure it's just not needed any more and it gives a benefit in another area. Even the 6-piston rotors have almost no slots left.

Worth noting that swapping the rotors and calipers are one of the best ways to save weight on our cars.

Yes, the Demon used different rotors but calipers are the same.

For the 6 piston Brembos, I believe the front rotors are now 15.6 inch in diameter instead of 15.4" (Someone can correct me if I'm wrong on that). They use different pads and caliper obviously to go with it. Unfortunately California decided that they don't want copper allowed in brake pads anymore. It's great for heat dissipation and friction. But without it, an increase in the size of the pads and rotors was needed to maintain acceptable performance.

I'm guessing a similar change was made for the 4 piston Brembo rotors as well?

4 piston may be the base scat pack front brake caliper. You may still be able to upgrade to 6 piston maybe?
There are (or were) different levels of scat packs. Base all the way to hellcat level, without the engine.

The front calipers changed and the rotors are the same dimension as 2020 just not slotted.

And yes on the 6-pistons the rotors grew in size from 15.4" to 15.7". The calipers stayed the same but the steering knuckles are different.
