I usually come up I-26 to I-40 to I-75. And yes, the run from Asheville to Knoxville is a blast.
When I looked, google maps had you going I-75 to Chattanooga then I-24 to up around Fort Campbell, KY. That stretch of I-24 is fun.

I’ve gone that way. Especially when I would visit family around St Louis. But when I’m heading for the farm I prefer to avoid Atlanta.

And I-40 through the Smoky Mountains is a nice drive.
